Charles A. Docter is a skilled culinary professional in large, high volume food service outlets and facilities. During a 20-year career, of which ten years have been in management, he acquired diversified knowledge, management skills and operations experience inall phases of food administration and preparation, cost control, purchasing and planning.

At Prairie View Texas A&M University, Charles is Event Chef for Sodexo, one of the world’s largest food service and facilities management companies. Charles manages the food preparation and overall operation serving 3,000 student meals daily. The team of 25 staff are direct reports, whom he hired and trained in front and back of house duties. Responsibilities include improving production and quality with minimum waste, menu design, food and labor cost, and ensuring compliance with regulations, performance standards, policies and procedures, sanitation and safety.

Previous experience includes Chef, Greenville Golf and Country Club (Greenville MS), Sous Chef, Harlow’s Three Diamond Casino Hotel, and Sous Chef tenures in Tunica, Mississippi: Fitzgerald’s Casino & Hotel; Gold Strike Casino Hotel; Bally’s Casino & Hotel; Sam Town Hotel Gambling Hall; and Grand Casino Tunica.

In preparation for the Olympic Summer Games in Rio de Janerio, Charles enjoyed the distinction of being assigned to the U.S.A. Olympics Track and Field training table in 2016. Charles is a Certified Trainer and completed the RTYC Hospitality Management & Culinary Arts Program, as well as earning certifications in Menu Management and ServSafe.
